Video: Learn How to Cook Delicious Nigerian Jollof Rice with This Recipe

Here's an easy-to-make recipe for Nigerian Jollof Rice—a staple in all Naija households and parties.

Ingredients

½ tin tomatoes

2 plum tomatoes

½ bell pepper

½ onions

½ scotch bonnet

2 garlic cloves

–––

½ Canola Oil

1 tsp curry

1 tsp thyme

1 stock cube

1 tbsp salt or salt to taste

–––

2 cups chicken stock

½ cup water

–––

2 cups parboiled rice

–––

¼ corned beef

Preparation

Blend tin tomatoes, plum tomatoes, bell pepper, onions, scotch bonnet and garlic.

Heat pot–add canola oil-fry blended ingredients in pot until reduced.

Add curry, thyme, stock cube and salt to taste.

Leave to simmer for 5 mins.

Add chicken stock and water.

Leave to boil.

Add parboiled rice.

Leave on stove until water is reduced–this should take about 25mins or less.

Stir in corned beef.

Spread in pan and broil on low in the oven for 5mins.

Garnish (optional).

Serve hot.

A South African soldier has been arrested after shooting a man for not wearing a mask in a mall.

According to TimesLIVE, a South African National Defence Force (SANDF) soldier shot a 27-year-old man for allegedly not wearing a mask at a mall. The incident is alleged to have taken place at a mall in the province of Limpopo. The man was reportedly shot after an argument with a soldier about not wearing a mask as required under COVID-19 regulations.
