Video: Learn How to Cook Delicious Nigerian Jollof Rice with This Recipe

Here's an easy-to-make recipe for Nigerian Jollof Rice—a staple in all Naija households and parties.

In this new video, you'll learn how to make Jollof Rice, Nigerian style.

Ingredients

½ tin tomatoes

2 plum tomatoes

½ bell pepper

½ onions

½ scotch bonnet

2 garlic cloves

½ Canola Oil

1 tsp curry

1 tsp thyme

1 stock cube

1 tbsp salt or salt to taste

2 cups chicken stock

½ cup water

–––

2 cups parboiled rice

–––

¼ corned beef

Preparation

Blend tin tomatoes, plum tomatoes, bell pepper, onions, scotch bonnet and garlic.

Heat pot–add canola oil-fry blended ingredients in pot until reduced.

Add curry, thyme, stock cube and salt to taste.

Leave to simmer for 5 mins.

Add chicken stock and water.

Leave to boil.

Add parboiled rice.

Leave on stove until water is reduced–this should take about 25mins or less.

Stir in corned beef.

Spread in pan and broil on low in the oven for 5mins.

Garnish (optional).

Serve hot.
